Quick, Healthy Lunch: Tuna-Topped Salad


Ingredients:
2 cans light tuna, drained
1 can white kidney beans, drained and rinsed
3 Tbs yellow mustard
1 can olives, drained
1/2 cup cherry tomatoes, sliced
1 tsp Italian seasoning
1/4 cup shredded cheddar cheese

-shredded lettuce and baby spinach for salad-

Directions:
Mix all measured ingredients together in a bowl. Place mixture on top of  shredded lettuce and baby spinach.

Serves 4.
