Quick, Healthy Lunch: Veggie Quesadillas



Ingredients:
2 Whole Wheat Flour Tortillas
1/4 cup Shredded Cheddar Cheese
5 Cherry Tomatoes
1/8 cup Spinach Leaves

Place a tortilla in the bottom of a hot pan with non-stick spray. Top with remaining ingredients and flip when the cheese starts to melt and the bottom tortilla starts to brown, about 3 minutes. Use a fork the puncture each tomato and press down. Brown the top tortilla, about 3 minutes, and your finished! Serve with sour cream.

Onion slices, cooked & shredded chicken, salsa, arugula
